Protein Brownie Bites

I can’t believe this week is the last and final week of the 21 day nutrition plan I’m doing. With traveling to Buffalo this weekend, the nutrition plan was a little off balance. I noticed how much easier it is to overdose on carbs(yellows), rather than get in protein, healthy fats, and vegetables. All of these together are what allows us to get the results we want. Anyways, back on track! I wanted to share with you a healthy little treat I found earlier on another website: Protein Brownie Bites!

What you need: – 1 chocolate shakeology – 1 tsp coconut oil – water until properly mixed – stevia (not required) I used skinny girl

Mix all ingredients in a bowl and place onto cookie sheet into about 6 tbsp size balls. Bake for 5-8 minutes at 375!

For my plan, this counts as – 1 red – 1 tsp

Apple Pie Oats: Day 3 #feelgoodblogging

As the weather starts getting cooler, the more I want comfort foods. Although Florida is still pretty warm out, there is nothing that makes me happier than feeling the crisp fall air, rumbling of the leaves on the ground, and of course, everything pumpkin!! I am even lucky enough this fall to experience the northern version twice this year, by going to Grand Rapids Michigan last weekend, and then my hometown, Buffalo NY, next weekend! Who doesn’t love to go pick some fresh apples to enjoy in your breakfast oatmeal?

Sticking with the fall theme, I want to share with you my breakfast of the week, because let’s be real, everyone loves a simple breakfast!

So, let’s get started with what you need:
– 1 small-medium apple, preferably McIntosh or granny smith
– 1/4 cup steel cut oats, or old-fashioned oats work as well
– 1 tbsp cinnamon
– 1/4 cup water
– 1/4 cup almond milk
– almond extract
– chopped walnuts(optional)IMG_4611.JPG

Directions:
1. Cut apple into cubes, leave some of apple cut into thin slices, about 3-4 will do.
2. Place oats, apple cubes, water, almond milk, cinnamon, and a dash of almond extract into bowl.
3. Place in microwave for 2-3 minutes to warm.
4. Once done, take out of microwave, and top with chopped walnuts and apple slices for a little fancy touch!
5. Enjoy your apple pie oats!!!

IMG_4610.PNGLooking to spice up this recipe a little bit? Swap the apples for 1/4 cup of pure pumpkin puree. Top with a little nutmeg and pumpkin spice and you have yourself some healthy pumpkin pie

PB Chocolate Chip Cookies

The other day I found a recipe I HAD to try!! So, I made these delicious, gluten free and vegan…. PB chocolate chip cookies!! They are DELICIOUS too! Hopefully this Cookie Monster doesn’t eat them all in one sitting.

Recipe:
1 can chick peas(yes, just trust me)
1/4 cup agave nectar or sweetener of your choice
1/2 cup peanut butter**
2 tbsp vanilla
Chocolate chips, I used Enjoy Life mega chunks
1 teaspoon baking powder

Preheat oven to 350 degrees. After rinsing and draining chick peas, blend all ingredients, except chocolate chips, in a food processor. Scrap sides to make sure you get it all blended well. Next, stir in chocolate chips.

Once all mixed, place on cookie sheet, about 1 tablespoon size. No need to place super far apart because they don’t spread out too much.

Bake for 10 minutes and enjoy!

If you’re like me, and love cookie dough, these could be rolled into balls and thrown in the freezer and enjoyed as a quick snack on the go!

Nutrition Facts:
70 calories, 7 carbs, 4 fat, 2 protein.

Note: If you have PB2, you could use that too!

Valentines Strawberry Muffins

Strawberry Muffins:

Made these amazing sweets for my boyfriend for Valentine’s Day. Not to toot my own horn or anything, but, they were pretty much amazing. They also had a secret ingredient in them, haha. See below for a copy of the recipe with the secret. ;) I figured a screenshot was easier than having to re-type everything when it works just as well :)

Once muffins are cool, you can top them with my chocolate Greek yogurt frosting and a slice of strawberry.

Instructions:
Melt down some dark chocolate chips, microwave works just fine
Once melted, mix in about 3 tbsp of Greek yogurt so it’s all mixed together.

Place frosting on muffins with a slice of strawberry as a garnish. See below for final outcome!! :)

Day 33: MMMM Oatmeal Banana Cookies

Last night I decided to try a quick and simple recipe my friend posted on pinterest and I couldn’t be more glad that I did. They are the bomb.com and completely clean.

Ingredients:
2 Bananas
1 cup Oats

Instructions:
Mash up banana and add in oats. It will be pretty runny but it’s ok, they dont spread while baking. Place “cookie dough” on baking sheet(in cookie size).
Bake cookies for 15 minutes at 350.

That’s it!! Easy right?!

If you want to make them even fancier..try this!
Melt down some dark chocolate chips. I used the microwave at 10 second intervals. Once melted, stir in tablespoon of plain non fat greek yogurt. You could add add in about three drops of chocolate stevia or vanilla to make it a little sweeter.

There you have it! Banana Oatmel Cookies with Chocolate frosting and only takes 20 minutes total!
